Healthy Chicken Au jus


Chicken Au jus

A French Dip you can feel good about??  After coming up empty handed searching for a healthy version of my husbands favorite I decided to experiment.  
This recipe can use deli roast beef, chicken, or turkey.  Giant Eagle carries a line of all natural lunch meat with no fillers or artificial ingredients. http://www.dietzandwatson.com/

INGREDIENTS:


Turkey Breast, Water, Contains less than 2% of sea salt, Organic Sugar. 


2 onions - sliced

8 oz package of Baby Bella mushrooms sliced

minced garlic (rosemary and thyme)
1 carton organic broth
12 slices lunch meat
2 French Baguettes
mozzerella
To get started saute 2 onions in a little olive oil.  When tender add an 8 oz package of Baby Bella mushrooms - sliced, minced garlic and, if using poultry, rosemary and thyme to taste. When the mushrooms have cooked down add a whole carton of organic broth. Beef if you're using roast beef or chicken if you're using chicken or turkey. Heat through and add 12 slices of lunch meat. Cook just until heated through. I use 2 French Baguettes from the Giant Eagle bakery because it has the least ingredients and no harmful additives.  Cut length wise and fill them with the meat, onions, and mushrooms.  I top this with a little mozzarella. Reserve the broth for the "dip".    
Bake for 10-15 minutes at 350 to melt the cheese and toast up the baguettes. Serve with a 
bowl of the broth for dipping.
This is a favorite around here.  It's a pricier meal at roughly $15 for just the main course, no sides.  But we are worth the splurge every now and again:)
